ADRA (Intern'l Relief)

Coq au vin

Ingredients:

Cooking spray

6 strips uncooked bacon, chopped

6 each green onions (white parts only, chopped)

2 1/2 to 3 pounds boneless chicken thighs, skin removed and trimmed of all visible fat

1 tablespoons dried thyme leaves

8 small white onions, peeled

1 cup button mushrooms, sliced

1 cup chicken stock

1 1/2 tablespoon cornstarch

2 tablespoon cold water

4 cloves garlic, crushed

1 cup dry red wine

1 teaspoon pepper

Directions:

  1. Lightly spray slow cooker with cooking spray
  2. Sauté bacon and chopped onion until bacon is crisp. Transfer to slow cooker. Reserve the bacon fat.
  3. Season chicken pieces with thyme. Brown chicken pieces on all sides in reserved bacon grease. Transfer to slow cooker.
  4. Sauté the small white onions and mushrooms in remaining drippings. Add to slow cooker.
  5. Pour stock over the chicken.
  6. Cover. Cook on LOW for 6-8 hours.
  7. Blend cornstarch in water. Add it to the slow cooker along with the wine and garlic and pepper.
  8. Turn heat on HIGH, cook for an additional 15 to 20 minutes or until juices bubble.
  9. Sprinkle parsley before serving.
