ADRA (Intern'l Relief)

Greek Shrimp

Ingredients:

Cooking spray

2 tablespoons olive oil

1 small onion, minced

1 clove garlic, minced

3 cups tomatoes, coarsely chopped

12 ounces tomato paste

1/4 cup dry white wine*

2 tablespoons parsley, chopped

1 teaspoon powdered or crushed oregano

1 1/2 pound medium shrimp, peeled and deveined

2 to 4 ounces Feta cheese, crumbled

Fresh ground pepper, to taste

Directions:

  1. Lightly spray slow cooker with cooking spray.
  2. Sauté the onion and garlic in the olive oil, for approximately five minutes or until onion is soft
  3. Combine all ingredients except the oregano, shrimp and feta in slow cooker.
  4. Cover; cook on LOW for 6-8 hours
  5. Turn heat to HIGH; add the oregano and shrimp; cook about 15 minutes until the shrimps turn pink.
  6. Stir in feta cheese, add fresh ground pepper to taste and serve immediately.

*Note: Use “real” wine; bottled wine sold in grocery stores, usually has high salt content.
