ADRA (Intern'l Relief)

Jambalaya

Ingredients:

Cooking spray
1 pound smoked sausage, sliced
1 cup boneless chicken breast cut into 1 inch pieces
2 onions, finely chopped
1 green pepper, chopped
1 cup celery, diced
1 can (28 ounce) tomatoes
3 cups chicken broth
2 teaspoons cajun seasoning
2 teaspoons garlic paste
2 teaspoons dried oregano leaves
1 pound cooked shrimp
1 cup cooked rice

Directions:

1. Lightly spray slow cooker with cooking spray
2. In a non-stick skillet cook sausage and chicken over medium heat until no
    longer pink
3. Add onions, green pepper, celery, stirring until softened
4. Add tomatoes and chicken broth and bring to a boil
5. Transfer mixture to slow cooker
6. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours
7. Add garlic paste, oregano, shrimp and rice
8. Cover and cook on high for 20 minutes until heated through
