ADRA (Intern'l Relief)

Thai Pork-Peanut Sauce Stew

Ingredients:

Cooking Spray

 

Stew:

 

2 pounds boned pork loin, cut into 4 pieces

2 large bell peppers, seeded and cut into strips

1/3 cup teriyaki sauce

2 tablespoons rice or white wine vinegar

1 teaspoon crushed red pepper

2 garlic cloves, minced

1/4 cup creamy peanut butter

 

For serving:

 

6 cups hot cooked rice

1/2 cup chopped green onions

2 tablespoons chopped, dry-roasted peanuts

8 lime wedges

Directions:

1.  Lightly spray slow cooker with cooking spray.
2.  Trim and discard fat from pork.
3.  Place all the ingredients except peanut butter in the slow cooker.
4.  Cover and cook on LOW for 8 to 9 hours.
5.  Remove pork from slow cooker, and coarsely chop.
6.  Add peanut butter to liquid in slow cooker; stir well to dissolve.
7.  Return pork to the sauce and toss to coat the meat.
8.  To serve combine stew and rice in a serving bowls. Top each serving with onions and peanuts;  serve with lime wedges.
