Cooking Spray
2 cups Great Northern dried beans,
soaked overnight. (navy, cannelloni or garbanzo beans can be substituted.)
3 cups boiling water
2 onions, chopped
3 jalapeno peppers, chopped. (for a
milder chili, remove ribs and seeds from chilies.)
1 1/2 pounds boneless chicken
breasts, cut into 1 inch
pieces 2 teaspoons garlic paste
1 tablespoon ground cumin
1/2 cup sour cream. (set aside some
for garnish.)
15 ounces corn, drained
1 tablespoon hot pepper sauce
1 teaspoons salt
1 tablespoon Lime juice
1/4 cup chopped cilantro, (set aside
some for garnish.)

1. Lightly spray slow cooker with
cooking spray
2bea 2. Combine beans and boiling water
in slow-cooker. Let stand while preparing
other ingredients.
3. Add onion, corn and jalapeno.
Place chicken on top.
4. Cover and cook on LOW for 7 hours
or until beans are tender.
5. Stir in garlic paste and cumin.
Cook on HIGH for an additional 20 minutes...
6. Stir in corn, sour cream, salt,
lime juice and chopped cilantro.
