ADRA (Intern'l Relief)

Texas Chuck Chili

Ingredients:

Cooking Spray

3 pounds boned beef chuck, cut into 1 1/2" cubes and trimmed of fat

1 1/2 tablespoons corn oil

1/4 cup chili powder

8 whole dried red peppers

2 tablespoons quick-cooking tapioca

2 cubes beef bouillon

1 teaspoon black pepper

1/2 medium onion, finely chopped

1 14.5-ounce can beef broth

1 tablespoon garlic paste

1 tablespoon oregano

1 teaspoon cumin

garnishes:  sour cream;  lime wedges

Directions:

  1. Lightly spray slow cooker with cooking spray
  2. In a large skillet, heat oil and brown meat; about 1 pound at a time, draining off excess fat.
  3. Transfer to slow cooker along with the rest of the ingredients except the garlic paste, oregano and cumin.
  4. Cover and cook on LOW for 8 to 10 hours
  5. Add the garlic paste, oregano and cumin. Stir.
  6. Turn the heat to HIGH and cook for an additional 20 minutes.
  7. Remove the whole dried peppers before serving.
  8. Serve with sour cream and a wedge of lime for a traditional Texas garnish.
