1 medium onion, minced
4 cloves garlic, minced
11/2 tablespoon curry powder
1 tablespoon butter
8 ounces skinless, boneless chicken breasts cut into bite-size pieces
1 large apple, cored and cut into bite-size pieces
1/2 cup apricot preserves
1-1/2 cups plain low-fat yogurt
2 tablespoons cornstarch
2 cups dried apricots, chopped
Directions:
1. Lightly spray slow cooker with cooking spray
2. In a large nonstick skillet brown chicken in skillet for two minutes.
3. Combine the chicken and the rest of the ingredients except yogurt,
cornstarch and
apricots.
4. Cover and cook on Low for 8 to 10 hours or on High 3 to 4 hours.
5. Stir together yogurt and cornstarch. Stir into chicken mixture along
with the apricots.
6. Cook on HIGH for an additional 20 minutes.
