ADRA (Intern'l Relief)

German Potato Salad

Ingredients:

Cooking spray

6 baking potatoes, sliced

1 medium red onion, chopped

4 ribs celery, chopped

1 green pepper, seeded and minced

1/2 cup cider vinegar

¾ cup water

½ cup olive oil

3 tablespoons sugar

1 teaspoon celery seeds

4 tablespoons fresh parsley, minced

6 slices bacon, cooked, drained, and crumbled

1/4 teaspoon ground black pepper

Directions:

  1. Lightly spray slow cooker with cooking spray

  2. In a medium bowl toss all the ingredient except parsley and bacon.

  3. Transfer to the slow cooker.

  4. Cover and cook on LOW for 4 to 4 ½ hours.

  5. Add the parsley and bacon. Stir.

  6. Season with salt and pepper. Serve hot.
