Cooking Spray
1 ½ pounds chicken breast, cut into ½ inch wide strips
1 large onion, thinly sliced
1 green pepper, thinly sliced
1 red pepper, thinly sliced
3 tablespoons lemon juice
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon chili powder
Soft flour tortillas or
pita pockets*
Directions:
1. Lightly spray slow
cooker with cooking spray
2. Layer the onions in the slow cooker
3. Combine lemon juice, oregano, cumin, chili powder in a medium sized
bowl.
4. Add chicken and toss well.
5. Pour mixture over the onion.
6. Cover and cook on LOW for 61/2 to 7 ½ hours.
7. Stir in the pepper strips.
8. Cook on LOW for an additional 30 minutes.
Suggestions for
condiments-guacamole, sour cream, grated lettuce, grated cheese, and fresh
salsa.
