ADRA (Intern'l Relief)

Easy Dried Fruit Chutney

(Makes 3 pints)

Ingredients:

Cooking spray

½ pound each dried and chopped:

peaches

apricots

pineapple

prunes

pitted dates

1/2 cup raisins

½ cup water

1 ½ cup apple cider vinegar

1 cup granulated sugar

2 teaspoons curry powder or to taste

1/2 teaspoon ground ginger

1/8 teaspoon cayenne

1/4 teaspoon salt

Directions:

  1. Lightly spray slow cooker with cooking spray

  2. In a separate bowl combine all the ingredients. Mix well.

  3. Transfer to the slow cooker.

  4. Cook on HIGH for 3 to 4 hours.

  5. Uncover and cook on HIGH for an additional 1 to 2 hours or until the fruits are tender but still retain their shape; do not overcook.

  6. Ladle into containers, cover tightly and refrigerate.
