ADRA (Intern'l Relief)

Lentil and Greens Soup

Ingredients:

Cooking Spray

1 cup dry lentils, sorted and rinsed

1 cup uncooked long grain brown rice

1 carrot, chopped

1 celery rib, chopped

1 medium onion, chopped

4 cups water

1/2 cup vegetable broth

1 teaspoon garlic powder

1/4 teaspoon ground black pepper

1/2 tablespoon salt

1/2 cup sliced fresh mushrooms

4 or 5 large kale, collard or chard leaves, tough stems removed

Directions:

  1. Lightly spray slow cooker with cooking spray
  2. Place the lentils, rice, carrots, celery, onion, water, and broth in the slow cooker.
  3. Cover and cook on LOW for 7 to 8 hours.
  4. Stir in the mushrooms and cook for an additional hour.
  5. Cut the greens into thin ribbons and cook in a pot of boiling salted water until tender.
  6. Add the greens and garlic paste, salt and pepper to the lentils just before serving.
