ADRA (Intern'l Relief)

Lowfat Vegetable Soup

Ingredients:

Cooking Spray
4 cups fat-free chicken broth
1 small cabbage, chopped
2 cups chopped zucchini
1 medium onion, minced
4 cupsV-8
1 cup chopped celery, thinly sliced
1 cup carrots, thinly sliced
1 (12 ounces) package frozen green beans
1 (12 ounces) can chopped tomatoes, undrained
16 ounces canned red beans
2 tsp. dried oregano
2 tsp. dry basil, crushed
1/4 tsp. pepper
1 tablespoons garlic paste
salt and pepper to taste

Directions:

1. Lightly spray slow cooker with cooking spray.
2. Combine all ingredients in slow cooker, except garlic paste, oregano, basil, pepper and salt.
3. Cover. Cook on HIGH for 5 hours.
4. Add garlic paste, oregano, basil and pepper.
5. Cook for an additional 20 minutes.
6. Sprinkle salt and pepper to taste before serving.
