“Glacier-glazed Salmon”  (Story)

I had promised my parents a flight over the Mendenhall glacier ice fields.  This was many years before helicopter flight-seeing and ice field tours mushroomed all over Juneau, Alaska.  Victor had just
earned his pilot's license and was eager to give us a tour of the glacier
and display his newly acquired flying prowess.

It was a picture perfect day with crystal clear blue skies.  We took off from the Juneau airport. 

We were not long in the air and the scene changed from dense forests to sparsely covered rocky hills.
                                                       
     Laura, (Dan’s cousin,) Gita, Dan and 
Victor banked the plane and flew                    Friends at the Mendenhall Glacier. alongside the mountain-side to spot
mountain goats and dall sheep.  Sure enough, we soon spotted quite a few.
They scattered at the plane's approach.  My mother, who was a lover of
animals, was thrilled to see them.

We soared over dramatic glacier spires and lakes, brilliant blue
crevasses and spectacular peaks.  We could not get enough of it.  It
was an unforgettable experience.  During our descent Victor flew us
over Auk Bay and circled over T-harbor where we used to live.

After this unforgettable experience, my mother treated Victor to a
fabulous dinner at our restaurant.

Glacier-glazed Salmon” (Recipe)

Ingredients:

3/4 cup maple syrup
1/4 cup soy sauce
1 lb. fresh salmon fillets
1/4 cup black pepper, coarsely ground
Cooking Spray

Directions:

1. In a medium bowl mix maple syrup and soy sauce.
2. Marinate fish in marinade in the refrigerator for 24 hours.
3. Preheat oven to 500 degrees F.
4. Spray pan with cooking spray
5. Place salmon in the cooking pan and sprinkle the top with cracked pepper.
6. Place fillets, pepper side up, on foil.
7. Bake on the top rack of the oven for approximately 7 minutes.
(Salmon should be moist not overcooked.)
