ADRA (Intern'l Relief)

Mushroom and Quinoa Soup

Ingredients:

Cooking spray
1/8 cup corn oil 1 medium onion, minced
1 stalk celery, minced
2 teaspoons garlic, paste
6 cups chicken or beef broth
6 cups mushroom, sliced
1 large carrot, chopped
1 cup uncooked quinoa (for GF)

OR

1 cup pearl barley, rinsed under cold running water
salt and pepper to taste

Directions:

1. Lightly spray slow cooker with cooking spray
2. Heat oil in a skillet and sauté the onion, celery and garlic for approximately 10 minutes
3. Place the mixture in the crock pot
4. Add broth, mushroom, carrots, and quinoa OR barley
5. Stir, cover and cook on LOW for 16 to 20 hours or on HIGH for 6 to 6 ½ hours
6. Add additional broth, if desired for a thinner soup
7. Season with salt and pepper.
