Vegetarian Mulligatawny Soup
Ingredients:
Cooking Spray
1 tablespoons vegetable oil
1 large onion, minced
2 carrots, chopped
2 stalks celery, chopped
1 green pepper, chopped
2 teaspoons garlic paste
1 tablespoons curry powder
1 teaspoons cumin powder
1 cup cooked rice
4 cups vegetable broth
1 cup plain yogurt
Finely chopped parsley
Directions:

Lightly spray slow cooker with cooking spray.

Heat oil over medium heat.

Add broth, onions, carrots, celery and green pepper.

Cook until softened.

Transfer to slow cooker.

Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours.

Puree soup and return to slow cooker.

Stir in rice yogurt, garlic paste, curry powder and cumin powder.

Cover and cook on HIGH for 30 minutes.

Ladle into bowls and garnish with parsley
